Otro mes que pasa (increíble que ya estemos casi en junio, aunque ahora que estoy corta de dinero los meses se me hacen más largos jeje), y traigo otro desafío de Daring Bakers. Este mes hicimos pão de queijo! Que no es nada menos que el pan de queso brasileño, justo a tiempo para el mundial.
Tal vez no hayan probado el pão de queijo propiamente, pero estoy segura de que conocen la idea, ya que es casi lo mismo que el chipá.
No es que recordara la receta del chipá, pero me fijé y los ingredientes son los mismos. La diferencia es en el procedimiento propuesto: al principio es un poco como una masa bomba, porque se hierve la leche con la manteca y después se agregan la fécula y los huevos. Pero al final queda una masa normal.
Eso sí, creo que los míos quedaron un poco grandes, ya que la receta decía 40 y a mi me salieron 16… (pero igual me comí 4).
Ah, y la receta original pide fécula de mandioca agria/fermentada (mitad de esa, y mitad de la normal). No sé si se consigue acá y la verdad no me gasté en buscarla, porque la común sirve igual.
De cualquier manera va a quedar muuuuy rico (y adictivo), como ya se imaginarán. Y si nunca lo probaron, les recomiendo que corran a hacerlo.
Pd: no pongo pan de queso porque como ven esto es tipo chipá; para mi el pan de queso es un pancito con queso, pero con levadura… por ahí estoy medio anticuada, pero bueno.
PPd: fijense en la página de Renata (el link está acá abajo), que también tiene una receta de waffles! Se imaginan los waffles de chipá??
Pão de Queijo
Receta de Testado, Provado & Aprovado!
Rinde: 16 pancitos grandes
250 g de fécula de mandioca
1/2 taza de leche
20 g de manteca
1/2 cdita de sal
125 g de queso en hebras
2 huevos
1. Hervir la leche con la manteca y la sal.
2. Tamizar la fécula en un bowl grande, y verter encima la leche caliente. Mezclar con tenedor, se formará una mezcla seca y grumosa.
3. Seguir mezclando con tenedor, desarmando los grumos, hasta que la mezcla se entibie.
4. Precalentar el horno a 200°C.
5. Agregar el queso e incorporar con las manos.
6. Agregar los huevos de a uno, hasta formar una masa.
7. Formar bolitas de masa y distribuirlas en una placa engrasada.
8. Hornear unos 25 minutos, hasta que comiencen a dorarse por abajo.

It’s always great to learn from these challenges, I also learned a lot this month, even being the hostess haha
I learned about chipá, will have to try it very soon! I understand that tapioca is the starch from the mandioca root. If you go to the market here in Brazil, you will find mandioca flour which is totally different, it is made from the whole root, I mean, it’s the grated and dried root. Now, if you grate some fresh mandioca and soak it in water, strain it and leave the remaining water untouched for a couple of hours, there will be a white sediment in the bottom, which is tapioca! Manufacturers dry it out and make the tapioca starch we buy at the markets :)
