Lemony greek yogurt ice cream

Hey guys! Can you believe Christmas is only days away? I know ice cream may seem a little irrelevant right now, especially to the folks who are making snowmen and peppermint hot chocolate. But trust me, it’s never a bad time for ice cream. Especially for this one.
This ice cream is so creamy and delicious, with a bit of a tang and a slight lemon flavor. It’s sort of like a homemade, full fat version of frozen yogurt.

It’s great on its own, but since it’s mild flavored it also works great with other stuff like fruit salad or waffles. Or peppermint brownies ;)

And did I mention it’s really easy? So yeah, you should go make it soon.

Lemony greek yogurt ice cream

Recipe from Ice Cream: The Perfect Weekend Treat by Susanna Tee
Yield: about 1 quart

6 tbsp lemon juice
2 cups greek yogurt
2/3 cup heavy cream
3 oz sugar
lemon zest, to mix in or to decorate (optional)

1. Whip the heavy cream until thickened (but not fully whipped).
2. Mix in the rest of the ingredients.
3. Churn in an ice cream maker, or use the freeze-and-whip-every-few-hours-until-frozen method.
