Este mes en Daring Bakers tuvimos que hacer panes con formas. Estaba esperando un desafío de pan, así que me puse muy contenta cuando vi que no solo ibamos a hacer panes, sino que eran panes re lindos! Había dos opciones de formas, esta que yo hice, y otra, también redonda pero con torzadas en el centro. De entrada me gustó la forma de flor así que elegí esa (al menos creo que es una flor, así que la voy a llamar así).
Para el relleno, podría haber hecho algo más creativo, pero la verdad que lo que más quería era simplemente azúcar y canela. Me había quedado con las ganas después de ver los riquísimos monkey breads de Sourdough Surprises (aunque en realidad hice mi monkey bread salado pensando en este otro pan, pero ya me entienden).
Usé la receta de masa de Daring Bakers, pero la del pan torzado, porque tenía leche condensada, que me encanta. Así además la podía usar para glasear el pan, sin tener que abrir una lata especialmente para eso. Todavía me queda un poco, que va a ser prontamente comido a cucharadas usado en una receta muy copada que voy a dar a conocer próximamente :)
Como ven el pan queda super lindo, pero de hecho es muy fácil de hacer. En esta página pueden ver las instrucciones paso a paso; mientras tanto les adelanto unas fotitos:
Me gustó mucho hacer este pan, quedó re rico y además fue divertido darle la forma, y sobretodo que quedara tan bien! Lo único malo fue que se tostó un poco, pero en parte fue culpa mía porque hice menos masa y no pensé en reducir el tiempo de cocción (en la receta sí está corregido). Pero igual estaba muy bueno!
Pan de canela con forma de flor
Receta adaptada de Sawsan
Rinde: 8 porciones
Para la masa:
130 g de leche condensada
1 huevo
1/3 taza de aceite
1/3 taza de agua
1 cdita de levadura en polvo
330 g de harina 0000
pizca de sal
Para el relleno:
50 g de manteca derretida
3 cdas de canela
1/2 taza de azúcar negra
1. Mezclar la leche condensada, la levadura, el aceite, el agua y el huevo.
2. Agregar la harina de a poco y amasar hasta obtener un bollo liso.
4. Tapar la masa y dejar reposar hasta que duplique su volumen.
5. Desgasificar la masa y dividirla en 4 porciones.
6. Estirar cada porción hasta formar un círculo de al menos 20 cm de diámetro.
7. Pincelar uno de los círculos con manteca y espolvorear con azúcar y canela.
8. Poner otra capa de masa encima de la primera, y repetir la operación de pincelar y espolvorear; luego hacer lo mismo con la tercera capa.
9. Poner por encima la cuarta capa y pincelar con manteca.
10. Con un cuchillo de oficio afilado, dividir la masa en 8 triángulos.
11. Hacer un corte a lo largo de cada triángulo, que cubra unos 2/3 del mismo; sin llegar a la base ni a la punta.
12. Tomar la punta de cada triángulo y pasarla por adentro del corte.
13. Acomodar los triángulos en una placa, y juntar hacia arriba las dos puntas en la base de cada uno (en este punto yo cubrí el pan y lo dejé en la heladera toda la noche, para cocinarlo para el desayuno).
14. Dejar descansar 15 minutos. Mientras tanto, precalentar el horno a 260ºC.
15. Bajar el horno a 240ºC y cocinar el pan 5 minutos; luego bajarlo a 200ºC y cocinarlo 10 a 15 minutos más, hasta que esté dorado.
