Today I have a recipe for a really good ice cream. Tres Leches Cake Ice Cream, to be exact. The name is a bit long so you may call it Tres Leches Ice Cream for short, but I wanted to emphasize the fact that there’s cake on it :)
I know it’s kinda weird that I’m just posting an ice cream recipe on the last couple days of summer. I just haven’t made a lot of ice cream on the past months (even though I finally got my replacement Zoku sticks!). Anyway, I’m a firm believer that ice cream is a year long dessert, but I know this timing may be convenient for those of you who are longing for summer.
Me, I can’t wait till autumn finally gets here. Although I haven’t made my plum pie yet, I’m ready for sweaters, cozy meals, and stepping on dry leaves. Yes I like to step on dry leaves and also to kick piles of them, though I mostly don’t do it out of consideration to whoever swept them (though I never really knew, why sweep the leaves if you’re not going to pick them up?). Also you never know when you may find an ACME anvil waiting for you in that innocent pile of leaves (yes I watch too many cartoons).
Also I’m tired of mosquitoes.
But let’s go back to the ice cream. This ice cream is so good and so easy: just mix and churn. For the cake bits you can use a cake mix like I did, or even a store-bought cake to make it easier. The base may seem like it’s not very sweet, but after you add the cake it will be perfect and taste just like a tres leches cake. Make sure to give it a try if you’re a tres leches fan! And if you’re not, well, you should try it anyway. It’s so good.
Tres Leches Cake Ice Cream
Recipe by Sabor Pastel
Yield: 3 pints
1 cup sweetened condensed milk
1 cup cream
1 cup milk
2 1/2 cups yellow cake cubes (preferably frozen)
1. In a medium jug, mix the sweetened condensed milk, cream and milk. Refrigerate until cold (you can skip refrigeration if your ingredients are already cold).
2. Pour into an ice cream machine and churn until it reaches a soft-serve consistency (if you don’t have an ice cream machine, you can put it in the freezer and whip it every hour or so, until it reaches the desired consistency)
3. Mix in the cake cubes and freeze.

I want that too! My ice cream machine is too small and doesn’t make nearly enough ice cream :P But still, any ice cream maker is a good investment, you should definitely get one!
