Felices pascuas a todos! Ya sé que acabo de hacer un post sobre hot cross buns, pero esta es la versión con masa madre que hice para Sourdough Surprises. Estos pensé en hacerlos más tradicionales, así que los saboricé con una mezcla de especias dulces (el mix marroquí de Saros que está muy rico). Pero cuando llegó la hora de agregar las pasas de uva, pensé, por qué voy a ponerle pasas si puedo ponerle chocolate? Así que bueno, no quedaron tan tradicionales después de todo.
Hubiera usado chips pero pensé que no tenía. Luego vi que sí, pero igual quedaron muy bien con chocolate picado.
Hice los pancitos y los dejé leudar toda la noche, para tenerlos listos para el desayuno. Los comimos calentitos mientras hacíamos los huevos, y quedaron muy ricos. Aunque a los huevos todavía les falta un poco…
Ah, y la próxima haría las cruces más grandes, porque me parece que quedaron muy finitas. Además me olvidé de pintar los pancitos con huevo, aunque por suerte igual quedaron bastante dorados.
Fuera de eso, los pancitos quedaron muy bien, y son una gran adición a mi nuevo repertorio de recetas con masa madre. Acá abajo tienen la receta, y el resto de los panes hechos por los demás sourdough bakers :)

Pancitos en cruz con masa madre (y chips de chocolate!)
Receta de Sabor Pastel
Rinde: 8 pancitos medio grandes
Para la masa:
1 1/4 taza de harina
1/4 taza de azúcar
2 cditas de mix de especias dulce
1/2 cdita de sal
3/4 taza de masa madre
1 huevo
1/4 taza de leche
50 g de manteca pomada
1/2 taza de chips de chocolate (o chocolate picado)
Para las cruces:
2 cdas de harina
1 cda de azúcar impalpable
1 1/2 cda de agua
1. En un bowl grande, mezclar la harina con el azúcar, las especias y la sal.
2. Agregar la masa madre, el huevo y la leche, y mezclar hasta formar una masa.
3. Agregar la manteca y amasar hasta obtener una masa lisa. Formar un bollo y dejarlo descansar tapado hasta que duplique su volumen.
4. Desgasificar la masa y agregar los chips de chocolate.
5. Dividir la masa en 8 porciones, formar un bollito con cada una, y distribuir sobre una placa rociada con spray vegetal. Tapar y dejar descansar hasta que dupliquen su volumen.
6. Para hacer las cruces, mezclar la harina con el azúcar y el agua. Llenar una manga con la pasta, cortar la punta y trazar líneas perpendiculares sobre los pancitos.
7. Precalentar el horno a 200ºC, y hornear por 15 minutos.
