Happy Pi day! I love pies, though I don’t make them as often as I’d like since they’re too big and full of calories for an everyday dessert. So any excuse to bake them is more than welcome!
I thought about what to make for today, and decided I wanted an easy, no-bake cookie crust cream pie. With peaches, to enjoy some peachy goodness before the season ends.
But clearly this isn’t a cream peach pie.
I ran into some issues while making the pie yesterday; first of all, the peaches weren’t very good. I’ve stressed this in the past, but I can’t seem to follow my own advice to make sure you get good fruit when making a fruit-centered dessert (especially with fruit that are often not good, like peaches or pineapples). So that was a bummer.
Then the pudding was too runny. I still made the pie (with yummy coconut cookies for the crust) and it was still good, but it was more like a pudding; I couldn’t cut a slice at all. So I thought I’d post this pie instead.
I had been wanting to make a Mississippi mud pie, so I made this for a dinner with friends a while ago. I never posted it because I didn’t have any good pictures, but it was so good! I mean, how can you go wrong with an oreo crust, flourless chocolate cake, chocolate pudding and whipped cream? It’s chocolate pie heaven.
This recipe is from Baked Explorations, which I’d so love to have but it’s a little pricey and buying online here has gotten a little ridiculous. I had some doubts about the recipe, like whether the oreos would burn after being baked for 50 minutes. But it turned out great! The only change I’d make would be on the procedure for the pudding. I’d add most of the sugar to the milk, and just a couple of tablespoons to the egg yolk mixture, since otherwise there’s too many dry ingredients and it turns into a lumpy mess. Also I boiled the milk to speed up the process.
As you can see, the chocolate cake looks big just out of the oven! But it does sink down a bit, just enough to fit the pudding.
This recipe is really long but totally worth it. Here’s the link if you want to try it. If you want a shortcut you can skip the crust, use a brownie mix, a pudding mix, and cool whip. I’ll still want a slice :)
